Creole sauce:
 3 medium onions, peeled and thinly sliced
 1-2 yellow chili pepper, seeded and thinly sliced
 ¼ cup chopped cilantro
 Juice 2 lemons
 Salt

Cut the pork into pieces and marinate with salt from the previous day.

Put the meat in a pot and cover with water.

Boiling, covered, over low heat until the water is consumed.

Remove the lid of the pot and cook in fat until golden brown and the meat is cooked.

Peel the potatoes and cut into thin slices.

Fry in abundant oil tender.

Creole sauce:

Sprinkle the onions with salt.

Rinse in cold water.

Put the onion in a bowl and season with salt, lemon juice, pepper and coriander.
