Directions

1For UI, chop the pumpkin pulp and fry both ingredients in a pot with a little oil and butter.

2Add the rice to the pan and simmer gently browning, under continuous stirring,.

3Dip the rice with a little hot vegetable stock and continue cooking, under continuous stirring,.

4Add the remaining hot stock to the rice when you need it.

5Put a pinch of salt and add the saffron (Optional).

6Finally add the grated cheese and let it melt and creamy rice.

7Serve immediately.

250 g rice

200 g pumpkin pulp

100 g ui

40 g grated cheese

20 g butter

olive oil

salt

a little bijol (Optional)

1 liter of vegetable stock
