Potatoes with parsley – Patatas a lo Pobre

Directions

1Cut the potatoes into slices about rough 1 / 8 up to 1 / 4 "in the width.

2Heat the oil over medium-high heat and add the onions and garlic and cook about 5 minutes on medium heat.

3Add the potatoes and cook over medium heat for about 20 minutes, stirring occasionally, until potatoes are tender.

4When you're done, remove from heat and strain out the extra oil.

5Put in a bowl and mix with the parsley.

6Add salt and pepper to taste and serve!

1 kg of potatoes peeled

3 cloves garlic chopped

1 onion finely chopped

chopped fresh parsley

3 teaspoons olive oil

salt and pepper to taste
