Ceviche van eend

1Cut the duck into pieces.

2Let marinate with salt, pepper, cumin, a tablespoon garlic, orange juice, pepper, half of the pepper and yellow pepper for thirty minutes.

3Brown the duck in hot oil.

4In another pan we fry in oil: remaining garlic, diced onion, pepper and yellow pepper.

5Add the duck with juice.

6Season with salt and cook for thirty minutes.

7Add the onion and cook 15 minutes.

8Serve with boiled cassava, lettuce and garnish with slices of hot pepper.
