1Put the egg yolks, sugar and evaporated milk in a bowl.
2Whisk over a bain marie until the mixture is a doubled and thicker.
3Remove from the heat, pour into a bowl and let stand ??until cold.
4Then sprinkle gelatin over the water in a saucepan and stir until dissolved.
