Directions

1Wash and cut the top of each tomato.

2Core from the center of each tomato and keep it for later.

3Store the outer part of the tomatoes for the filling.

4Heat the oil over medium-high heat and add the onion and garlic.

5Cook over medium heat for about 10-12 minutes or until the onion is soft and translucent.

6Add the meat of the tomatoes and cook for a few minutes.

7Add the shrimp and cook over medium-high heat 4-5 minutes until the shrimp are cooked.

8Preheat the oven to 190 °

9Prepare cheese filling. When using ordinary cream cheese, I suggest adding some chopped garlic and fresh herbs.

10Add the shrimp and onion mixture to the cheese, along with fresh chopped parsley.

11Add a little salt and pepper to taste with lemon juice.

12Spoon the mixture into each tomato, slightly more than the fill each a.

13Place in the oven for about 12 minutes or until the filling is light brown.

14Serve and enjoy!

4 tomatoes

just about 1 cup cottage cheese, fresh cheese, or a similar

just about 12 raw big fresh shrimp, peeled

1 onion finely chopped

2 cloves garlic chopped

chopped fresh parsley

1 teaspoon lemon juice

3 tablespoons olive oil

salt and pepper to taste
