1Behind 1 of 2 chopped onions with olive oil, together with 1 of 2 rode paprika's, minced (not too fine) 1 tablespoon chopped garlic and parsley, mince 4 tomatoes, peeled, 1 tablespoon paprika, 1 cup soaked and chopped dried mushrooms, 2laurierblaadjes, oregano, salt and pepper to taste and ending with a big glass of dry white wine of good quality.
2While we fry in olive oil 2 chicken breasts cut into cubes and add to the sauce that has already been made, cook everything together again, for throwing on polenta.
3Can be replaced by chicken or chorizo sausage, of both, of ham of spec, fat and diced.
4If made with chorizo and want a really strong flavor, paprika replaced by cayenne.
5Serve sprinkled with grated cheese.
