Rice Cake

1Preheat the oven to 180 degrees.

2In a large pot, we cook the garlic, onion and chiles in hot oil until tender.

3Stir the tomato, corn and rice; 5 minute simmer.

4Place 1 / 2 of this mixture in a buttered 13x9-inch dish.

5Combine sour cream and whipped cream and spread 1 / 2 of this mixture over the rice.

6Top with 1 / 2 of the cheese.

7Repeat the layers.

8Dek a bak 30 minutes or until the mixture bubbles.


4 cups steamed white or brown rice

1 clove of garlic, mince

1 small onion, chopped

3 chilipepers Serranos of jalapenos, chopped

2 tablespoons oil

28 and. geplette tomatoes

12 and. white corn kernel, leaked

1-1/2 cup grated Cotija cheese brand La Vacarica

2 cups of regular or light sour cream

1 / 4 cup heavy cream or half & half
