
Add the soy sauce, honey, vinegar, sherry, sugar, ginger and garlic in a bowl and mix together well, mix thoroughly until smooth.
Put the chicken wings in a shallow dish and pour the honey marinade over the top.
Lubricate the marinade over wings then cover and leave in a cool place for marinating 2 hour.
While the wings marinating are making the sauce.
Fry the onion in the oil for about 5 minutes until golden brown.
Stir in sugar, lime juice and peanut butter, and add the coconut milk little by little.
Add the salt and cook over low heat until smooth. Then put aside.
Remove the chicken wings from the marinade and place on a rack in a roasting tin.
Cook in preheated oven at 190C for 15-20 minutes, until crisp and golden brown and cooked.
Baste occasionally with any remaining marinade.
As an alternative, grill in 5-7 minutes per side.
Serve with warm peanut sauce.
