 250 g rice
 200 g pumpkin pulp
 100 g ui
 40 g grated cheese
 20 g butter
 olive oil
 salt
 a little bijol (Optional)
 1 liter of vegetable stock

For UI, chop the pumpkin pulp and fry both ingredients in a pot with a little oil and butter.

Add the rice to the pan and simmer gently browning, under continuous stirring,.

Dip the rice with a little hot vegetable stock and continue cooking, under continuous stirring,.

Add the remaining hot stock to the rice when you need it.

Put a pinch of salt and add the saffron (Optional).

Finally add the grated cheese and let it melt and creamy rice.
