 250 ounces of cooked fish
 1 tablespoon butter
 small onion, chopped
 1 tablespoon flour
 cup fish stock
 2 tablespoons white wine
 2 tablespoons whipped cream
 2 tablespoons grated cheese
 Salt and pepper to taste

Melt the butter in a pan and fry the onion.

Add the flour, brown a little and add the broth and wine stirring continuously.

Cook until creamy consistency.

Then add the fish, which has been previously fragmented.

Then add the sour cream and season with salt and pepper.

Once everything is mixed, divide into four shells or refractory bowls.

Sprinkle with cheese and place in the oven with the grill on for ten minutes or until the top is golden brown.

Remove from the oven, Garnish to taste and serve hot.
