 4 cups onions, chopped
 4 cups tomatoes, peeled and finely chopped
 Salt and pepper
 3 tablespoons olive oil
 ¼ cup fresh cilantro, chopped (Optional)

Rinse onions in cold water thoroughly.

Mix the tomatoes with onions.

Season with salt and pepper.

Put the olive oil and toss well.

Sprinkle with chopped coriander and serve.
