Rice a la Diabla

1Put in a large pot of water.

2Add mussels and cook for ten minutes until they open.

3Remove the peel. Set aside.

4Strain the broth, bring back to pan.

5Add the shrimp and cook for two minutes.

6Remove the skin and other impurities.

7Add the fish broth and squid.

8Bake for 15 minutes.

9Remove and set aside.

10Add the rice and achiote and simmer until dry.

11In The Meantime, Cut the fish into small cubes.

12Cut the squid and toss with the tomato paste.

13Season with salt and pepper.

14Aside: Heat the oil and fry the peppers and onion in it.

15Add clams and set aside shrimp, fish and squid with tomato paste and stir.

16Finally,, When the rice is dry, mix and bake the above prepared everything for a few minutes.


4 cups of rice

10 cups water

500 gram mussels

500 grams shrimp

500 gram fresh fish and chopped

250 ounces cleaned squid

1 tablespoon achiote

cup tomato paste

4 tablespoons oil

4 peppers, Creole, chopped

2 chopped onions

Salt and pepper
